What Vegans Eat – Day 230

Breakfast: It’s the Oatmeal Bar this morning, just like at a hotel, only better. The oatmeal is made with organic thick cut, rolled oats and cooked with organic apples, organic raisins and organic pears. I chose to top it with ground organic flax seeds, organic ground cinnamon, and unsweetened organic soy milk (just soybeans and water) and had a pot of organic Jasmine Tea to go with it. Is there a hotel anywhere in the world where you can get this? I don’t typically include the word “organic” in my posts but I am today. Almost all of the food we eat at home is organic. Daily Green Juice: Kale, Celery, Carrots, Ginger, Lime.
 
Dinner: We’ll be traveling in a few days so it’s a good time to clear out what’s in the refrigerator. We had a repeat of yesterday’s dinner: Big bowls of Leek Vegetable Soup with Quinoa “Matzo” Balls.

The soup was very filling but I managed to finish one of the remaining two French Herbed No-Egg Omelettes with Leeks.

Evening: Relaxing after a productive day, we watched the movie Love and Mercy while munching on Earth Balance Vegan Aged White Cheddar Popcorn (from the VegNews Comfort Food party we went to last week), a little Halvah and Mint tea. This 2014 film about musician and songwriter Brian Wilson of the Beach Boys was excellent, brilliantly acted, a true, touching story with a happy ending. We paused the movie a few times to take a look outside at the Blood Moon. We had a perfect view from the terrace. I like looking at the moon especially at a rare moment like this. It puts everything in perspective.
