What Vegans Eat – Day 260

Breakfast: This may look like another bowl of our fabulous oatmeal but it’s not. It’s oatmeal mixed with a little bit of polenta and lots of water, cooked slowly with sunflower seeds, apples and a cinnamon stick. It became a creamy, subtly flavored, yummy bowl of gooey goodness!

Lunch: It’s easy when you make a lot. We had Cabbage Vegetable Soup with “dust.” That’s Nutritional Yeast.

Dinner: We were invited to our friend Janet’s birthday party which took place at the New Bodai Restaurant in Flushing. We ordered many vegan dishes for everyone to share including A Sam Fish, General Tso’s Chicken, Soy Cakes with Lotus Root, Sesame Chicken, Pumpkin Soup, Stir Fried Greens; Spicy Green Beans and more. First we had the Pumpkin Soup.

I ordered A Sam Fish which I love. It’s made with layers of bean curd skin and nori and comes with a flavorful sauce.

The Soy Cakes with Lotus root were another favorite.

The dishes just kept coming out.
