What Vegans Eat – Day 262

Breakfast: Breakfast was Bai Mu Dan tea and nothing more. After our big meal the night before I was not very hungry and knew I would be having a big lunch out in a few hours.
 
Lunch: After interviewing Judith Haskins on my IT’S ALL ABOUT FOOD show on Tuesday about the book she and her sister and mother published from her late father’s manuscript, she invited me to lunch at Ozu’s. She and her sister, Laura Hyman greeted me with big smiles. I ordered the Mabo Tofu made with tofu, broccoli, string beans, carrots, lotus root, garlic, ginger, and shiitake mushrooms in spicy miso based stew.

After lunch they brought me up to meet their 102-year-old mother, Shirley. She wanted me to photograph her eating her vegan lunch. She and her daughters are vegan. Watch this lovely video made when Shirley was 100. Shirley repeated to me several times what her husband had told her when he died, “Take the love you have for me and spread it around; in love spread around, there beauty is found.”

I was treated to a raw, vegan, almond cheesecake for dessert!

Daily Green Juice: Kale, Carrots, Celery, Lemon, Lime
 
Dinner: Friday evening dinner began with a little cocktail – Prosecco filled with fresh Pomegranate seeds.

Yesterday’s Mac ‘N Cheese with Brown Rice Pasta and Cashew Cheese Fondue made a lovely first course.

A hearty Kale Salad made with Tahini Dressing, Avocado, Olives, and Garden Tomatoes (a gift from Gary Steiner and Paula Davis last weekend see What Vegans Eat – Day 257) was the main event.
