What Vegans Eat – Day 281


Breakfast: It’s just too much fun having cheese in the house! Our REAL Almond Mozzarella Cheese that is. You’ll be seeing it on everything in the next few days. The leftover Crushed and Crispy Potatoes from yesterday became a great breakfast, topped with Almond Mozzarella Cheese.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lime
Dinner: French Onion Soup was on my wish list. The Baguette and Almond Mozzarella Cheese were made yesterday. Now all I had to do was caramelize some onions and make a “beefy” broth, which I did with water, red wine and adzuki miso. Voila! It was served with a Kale Salad tossed with a dressing of tahini, red wine, nutritional yeast and water and topped with steamed Leeks.
Evening: Gary treated me to a Strawberry Maca Smoothie and Air Pop.
