What Vegans Eat – Day 29


Breakfast: Big day of filming ahead. Big days need to start with oatmeal! It went well with Bai Mu Dan White Tea.
We were filming the next episode of the Transition Kitchen and that means BIG FOOD! With Gary’s spicy tomato sauce, he put together the best eggplant parmesan EVER!! Who needs dairy? We don’t. This dish is gooey good with vegan Béchamel and Vegan Mozzarella.
Daily Green Juice: Kale, Collards, Celery, Carrots, Black Radish, Lemons
Dinner: After a long day of filming we finally got to sit down and eat, sometime well after midnight. And it was worth it. We worked hard and the rewards were rich. Another classic Italian dish with some of the same elements from lunch which became lasagna. That and a little red wine and so ended another day at Responsible Eating And Living Headquarters.
