What Vegans Eat – Day 30

Breakfast:
Since going to sleep very late or early in the morning the day before, Gary said that what I posted for dinner yesterday was really our breakfast. So I’m including it as breakfast in this post too. Late night or early morning lasagna, either way, it’s gooey good food.
 
 
 
Lunch: Whether this meal was a late breakfast or lunch it was nourishing and cleansing. A green smoothie, filled with kale, strawberries, oranges, blueberries, cashew cream and water.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
 
Dinner: Working furiously all day on the promotion for our upcoming fundraiser, it’s easy to forget about eating until you are so hungry it seems like you can eat almost anything. There’s nothing really bad to snack on in this house so there is nothing to tempt us when hunger strikes. I typically go for an apple or have my daily allotment of two Brazil nuts and some tea to quiet those thoughts to eat anything. Somehow, once again, Gary surprised me with an amazing dinner that came together rather quickly: Field Roast sausages with sautéed Escarole and Onions, Brussels Sprouts and Sweet Potatoes served with Spicy Tomato Sauce. The tomato sauce was prepared already during our Transition Kitchen food show filming the day before.

Evening: We were out of dark chocolate bars but had a bag of chocolate chips. Yes, we broke into the chocolate chip bag! We munched on a few along with some Mocha Teeccino.
