Breakfast: Twas the day after Christmas and I made cornbread. We are still feeling lousy with our colds but I thought I could manage making Corn Bread. It’s an easy recipe. I served it with the Tempeh Bacon Gary had made and yesterday’s Berry Banana Compote.

Trying to recover and catch up on our ongoing projects we opted for ordering in from our new local favorite, Green Zenphony. We had our favorites, Veggie Roast Pork Noodle Soup, Veggie Roast Duck Noodle Soup and Chinese Broccoli. I am so grateful they are here!

    • Happy New Year Patricia! What a great way to begin, pursuing a vegan lifestyle. There are many ways to go about going vegan. You may start gradually or go all the way, all at once. Everyone is different. Some go vegan for breakfast, or one day a week and expand from there. Or you can think about the foods you are eating now and eliminate the animal in it. Dairy is easily replaced with nondairy milks: soy, almond, oat, hemp, rice – there are so many today. There are many veggie meats on the market to help transition as well. Think of plant foods you like to eat and eat more of them. Crowd the plate with leafy greens, beans, whole grains, raw nuts and seeds and fruit, leaving less and less room for the animal foods.
