What Vegans Eat – Day 325


Breakfast: After a late night and lots of great food at our New Year’s Eve party for two at home I was not hungry in the morning. I was thirsty and in the mood for fruit, grapefruit with a little Earl Grey Tea.
Lunch: Nothing like a mountain of kale after an evening of feasting. Gary made this Kale Salad with a light peanut dressing, red onions and blanched carrots.
Daily Green Juice: Kale, Collards, Celery, Carrots and Ginger.
Snack: When you have something like our Flourless Chocolate Cake in the refrigerator it calls to you. We listened and enjoyed a slice with some Teeccino.
Dinner: This meal was easy. There is still plenty of last night’s lasagna. I think it was even better the second day.
