Breakfast: Just tea for breakfast this morning. When we are out of soy milk, we usually make a batch of coconut milk using Let’s Do Organic Creamed Coconut. We dilute it more than recommended with 3 cups of water to a 7 ounce package and we find it’s just right.
Lunch: We celebrated my brother’s birthday a few days early at Sauro’s Town Square Pizza Cafe in Patterson, New York. They have something for everyone there including gluten-free pizza. I was not in the mood for a wheat belly so I ordered a side of Broccoli Rabe. It was delicious!
I also had the Arugula Salad with Beets and Red Onion. Lots of color means lots of flavor and nutrients.
We got back to my brother’s house and enjoyed some “birthday cake.” His name is Barry and he always asks for the same thing, a Raw Berry Pie.
Daily Green Juice: Kale, Collards, Celery, Carrots, Ginger
Dinner: We began with dessert for dinner! It was easy and good since we still had New Year’s Eve dessert leftovers of Flourless Chocolate Cake.
After the cake we thought we’d enjoy some leftover lasagna. However we no longer had any of the Spicy Marinara that went with it. This is not a problem when you live with a saucier, like Gary. Nothing like having your own sauté chef at home to whip up a sauce in no time. This was the best sauce I ever had! He made it with roasted red peppers, red wine, sun dried tomatoes, onions, celery, and magic!
