What Vegans Eat – Day 327

Breakfast: Still in the holiday celebratory mode and wanting to get out after being cooped up for a week with a cold we planned a special day. We got up early, had some Vanilla Black Tea with Coconut Milk and headed to the subway to the AMC Loews Lincoln Square 13 theater for the 8:45am showing of Starwars: The Force Awakens. We were really excited to see it, especially at this IMAX theater. I don’t think I have ever gone to a movie theater in the morning. It was packed. We had a great time even though we didn’t like the film. We were disappointed with just about all of it, except for the great performances by Harrison Ford, Carrie Fisher and Oscar Isaac. I’ve never been a fan of Keira Knightley and Daisy Ridley’s Keira lite was a big yawn. After the film we walked over to Le Pain Quotidien which we knew would not disappoint. I ordered my favorite Lentil Avocado Salad with Brussels Breakfast Tea and Soy Milk.

Gary ordered the organic Steel-Cut Oatmeal with organic bananas, walnuts and maple syrup and Whole Grain Bread. We slathered our breads with Fig Jam.

We lingered there a while and refilled our tea pots. In Manhattan you never know who will be eating at the table next to you. It may be Eliot Spitzer!

After lunch we went to our favorite grocery store in Manhattan, Westerly Natural Market. We had groupons and bought lots of dried beans, chickpea miso and a $40 bag of organic walnuts. Walnuts are $15.99/pound! It adds up fast.
 
Snack: Once at home, with the groceries unpacked, we had a snack of fresh organic Blueberries.

Daily Green Juice: Kale, Collards, Celery, Carrots, Ginger
 
Dinner: We had discussed freezing the remaining New Year’s Eve Lasagna but I knew it would not last long in the refrigerator. We had more for dinner. There’s no microwave here, and that is intentional. To reheat our Lasagna Gary placed several squares along with Collard Greens and Red Onions in a frying pan with a little water in the bottom. This steamed the lasagna perfectly.

Again, Gary the saucier created another new sauce, the third one for our Lasagna, Quick Cashew Cheese Sauce. We enjoyed our meal as we got ready to watch the season premiere of Downton Abbey.
