What Vegans Eat – Day 337


Breakfast: Bai Mu Dan tea began breakfast as Gary created a new bread recipe. I waited with anticipation until it was done. Then we had a kale salad tossed with a tahini lime dressing along with these freshly baked Rustic Rolls.
Lunch: There seemed to be no time to take a break and I was hungry. I thought about those new rolls and happily made myself a quick PB&J, with Peanut Butter and Apricot Jam.
Daily Green Juice: Kale, Collards, Celery, Ginger, Lime
Dinner: I was treated to a warm, creamy comforting Mung Bean Chowder. I had many bowls. More tomorrow!
