What Vegans Eat – Day 349

Breakfast: Sometimes tea is all I need to start the day. We had Earl Grey tea with soy milk.
 
Lunch: From time to time I crave beans. Just plain beans. I soaked yellow split peas in the morning and cooked them for lunch. I started with a small bowl of plain split peas. Then I had another when Gary came home from his Monday class. This time I sprinkled the peas with nutritional yeast and black pepper.

There remained one mini loaf from the batch of Five Seed Raspberry Lemon Muffin recipe. It was just right, sliced and toasted.

Daily Green Juice: Kale, Collards, Celery, Lemon, Ginger
 
Dinner: We had a light fruit salad of pineapple, bananas, oranges, walnuts and blueberries.

Evening: We didn’t eat a lot today! We ended the evening with some sliced oranges.
