Breakfast: Be prepared! I remember as a little girl I would listen to my mom’s vinyl records, over and over and over. One of them was Doris Day, Wonderful Day that included the song Be Prepared. I didn’t realize it then but I guess I learned a lot from those songs. With a busy day planned ahead I was glad we had prepared in advance. The day began with Kale Slaw from the day before.
Lunch: Still too busy to think about food and getting hungry, next up was cold Brown Rice Pasta in Cashew Cheese Fondue Roasted Red Pepper Sauce. It’s good cold!
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Lime, Ginger
Dinner: Instead of massaging the kale, Gary shredded the kale leaves in a food processor. He tossed it with Baked Tofu (made the day before), Olives and Avocado with Tahini Dressing. It was fabulous. But the real treat was my ultimate comfort food – Brown Rice with Tahini Dressing.
