What Vegans Eat – Day 354


Breakfast: Before going to bed the night before we started to imagine what we would enjoy for breakfast. When we awoke, we made it. It’s a scramble with seasoned soft-tofu/garbanzo bean flour batter mixed with sautéed onions and collard greens, baked in a cast iron pan in the oven and served with home fries, served with Earl Grey Tea and soy milk.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Lime, Ginger
Dinner: What a wonderful meal of flavors and lots of leftover for the days to come. We had a kale salad, a tempeh bacon on homemade focaccia with a roasted red pepper aioli and a mung bean stew.
Evening: We watched the movie The Martian with some Medjool Dates and Vanilla Almond Rooibos Tea. I mention it because the movie was, in a sense, about food; growing potatoes on Mars. It made me want more potatoes!
