What Vegans Eat – Day 355


Breakfast: You’ll be seeing this mung bean soup all week since we made a lot. I had it for breakfast with fresh oranges and Earl Grey tea.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Lime, Ginger.
Dinner: Sweet repeats for dinner: yesterday’s Kale Salad, Tempeh, Roasted Red Pepper Aioli, more Mung Bean Soup, Foccacia and… Potatoes! Yukon Gold and Sweet Potatoes baked to perfection. After watching the Martian the night before I craved potatoes. They hit the spot.
Evening: I made the virgin version of our Angela Pia recipe which some would call simply Vanilla Pudding. It’s sweet! We had peppermint tea afterwards to cleanse the palate.
