What Vegans Eat – Day 363

Share

Breakfast: Gary got up early to go to his acting class. When I finally got moving I was happily greeted by a hot pot of Earl Grey tea that Gary had wrapped in towels to stay warm. I had some errands to run and got dressed warm to face the dumping of snow outside.

Lunch: When I got home I was cold an hungry. I put the leftover Green Zenphony pea pod leaves, brown rice and (vegan) Asam Fish sauce into a pot with mushroom powder and water and made a cozy soup.

Daily Green Juice: Kale, Collards, Cabbage, Celery, Carrots, Lime, Ginger

Dinner: My brained was drained of creativity by dinnertime but I wanted to have food ready for Gary when he got home. When I don’t know what to do I just chop onions, carrots and celery and sauté them. By the time they are done I usually have a plan for them. Gary came home and took over. He added kale and tofu to the mix and asked me to make a peanut sauce (peanut butter and water). Voila! We had a fabulous meal.

Evening: I tried a new kind of apple, the yellow opal apple. It was sweet, crunchy and fragrant.
