What Vegans Eat – Day 364

Breakfast: We had been out of rolled oats for a few days. I know, it is hard to believe, but it’s true. Gary had picked some up after his class yesterday so we celebrated with Oat Waffles, Raspberry Apple Coulis and English Breakfast tea. Gary put his favorite toppings on his waffles: peanut butter and banana.

Daily Green Juice: Kale, Collards, Cabbage, Celery, Carrots, Lime, Ginger
 
Dinner: Gary made a variation on his famous Vedure Al Forno (oven roasted vegetables) with onions, carrots, celery, sweet potatoes, garlic and olives. I prepared toasted buckwheat with walnuts. This was a great meal.

Evening: It’s after dinner. You are relaxing after a long day and craving something sweet. We’ve all been there. That’s why we keep frozen and fresh fruit on hand to blend into sweet delights for sweet nights. I made this fruit soup, or smoothie blending together 6 ounces of frozen raspberries, two small opal apples, one banana, one tablespoon of red maca powder, 1/3 cup unsweetened shredded coconut and one cup of plain soymilk (soybeans and water). It made two servings. I thought at first it would not be sweet enough and in the end it was almost too sweet for me. Sweet and good. After a little peppermint tea it was time for bed. Good night!
