What Vegans Eat – Day 371


Breakfast: Still feeling a little under-the-weather, Gary offered to make me breakfast. I requested Breakfast Polenta and he made the polenta with a mixture of water and coconut milk and then made a Blueberry, Banana and Coconut Milk cream to go with it. It was exotic and delicious!
Our weekly delivery from GoOrganicNYC arrived earlier than usual and we celebrated the abundance and the beauty by laying it out on our kitchen table and photographing it for my blog. Here it is!
Daily Green Juice: Kale, Collards, Celery, Carrots, Ginger, Lime
Lunch: Gary made a quick Red Lentil, Onion and Tomato soup that we had topped with “dust” (nutritional yeast) and olives on the side.
We finished up the Carrot Lentil Paté spread on tortillas with Tahini Dressing.
Happily there is still some Flourless Chocolate Cake in the house and we sampled a bit of it.
Dinner: After speaking with Chef Del Sroufe on IT’S ALL ABOUT FOOD, I thought about making one of his recipes with cauliflower. He uses cauliflower in place of cream to make flavorful creamy sauces. Then I thought about how I loved cauliflower steamed and I opted for just that, with a kale salad and more soup.
