Breakfast: Do you remember what you had to eat yesterday? One of the benefits of this daily blog for me has been to pay more attention to the present moment, something that takes a lot of effort for most of us. And I still have a long way to go. When putting today’s post together I smiled when I looked at the breakfast picture. I had already forgotten that we had Buckwheat Waffles with Pink Grapefruit. Looking at the photo reminded me of how good those waffles were and how lovely that moment had been. The recipe calls for sunflower seeds but since we were out, I used sesame seeds instead, grinding them up with the dry ingredients.
Of course, the waffles were served with our favorite schmears – Apricot Butter, Peanut Butter and Vegan Butter. It was National Peanut Butter Lover’s Day, another reason to celebrate Peanut Butter! Here’s my Peanut Butter Lover.
For some reason I felt profoundly hungry a few hours later and grabbed the small leftover containers of Kale Salad, Avocado and 1/2 Field Roast Sausage and devoured them.
Lunch: Before my radio show at 4pm, Gary prepared a perfect Kale Salad with Avocado for me.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lime, Ginger
Dinner: Celebrating all the things we love here in Forest Hills since I returned home from Costa Rica a couple of days ago, we had to include a meal from Green Zenphony. We ordered in our favorites. That meant the Roasted Veggie Duck Noodle Soup for me and the Roasted Veggie Pork Noodle Soup for Gary. I was so full I couldn’t touch the Chinese Spinach we ordered. That will be for tomorrow.
Evening: After catching up on Downton Abbey episode I missed while away we had some Mint tea.
