What Vegans Eat – Day 408


Breakfast: It’s still the holiday of Purim and there were four remaining Hamentaschen cookies. Guess what we had for breakfast? We each had one with apricot butter and one with prune butter.
Lunch: This can be a fun lunch when you want to keep going at whatever you are doing: Celery and Carrot Sticks, Peanut Butter and Seed Caesar Dressing.
Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Lime
Dinner: Dinner buffet with leftover Green Zenphony Stir Fried Pea Pod Leaves, Brown and Red Rices, Portobello Mushroom in Pepper Sauce with Golden Bricks, plus of our own leftovers – Vedure Al Forno with Red Cabbage plus a big bowl of Baked Yukon Gold and Sweet Potato Fries and Field Roast Italian Sausages. It was a feast!
Evening: Still working on an enduring cough I am making sure I get plenty of rest. But when I got into bed I wasn’t ready for sleeping. I went into the living room where Gary was and announced, “I want ice cream!” I grabbed the frozen Blueberries, a little cashew cream and a very ripe Banana, whirred it up in the Vitamix and made the perfect treat. Then I was ready for bed.
