What Vegans Eat – Day 42

With the release of the third episode of the REAL Good News in Review, it was time to tell the world about it. I spent the day at the computer, creating art work for bulk emails, posts and tweets, and there was no time to eat! Gary was concerned and brought me bowls of food throughout the day so I could keep going. Don’t try this at home! Eat at a real table. I don’t do this very often but sometimes you just have to. It was kind of fun.

Before breakfast I was served the most delicious tea I have ever had. It was an organic English Breakfast with coconut cream. So, so good.

Breakfast: Leftover frittata from Sunday, and Gary was right! It was better cold. So good.

Lunch: More leftovers! The pasta with peas and collard greens merged together nicely in a bowl and went down easy.

Snack: We love our latest gorp mixture and it’s a great snack to munch on when you are stuck at your desk all day.

Daily Green Juice: Kale, Collards, Celery, lemon
 
Dinner: Gary made chicken soup! Or everything-but-the-chicken soup. It was comforting, nourishing and flavoring and we filled up with seconds.

Evening: I don’t think I ate enough and it dawned on me while still working, on the couch now, watching David Letterman. Gary made me a lovely bowl of rolled oats and coconut milk.
