What Vegans Eat – Day 44


Breakfast: I was inspired after interviewing Jessica Nadel on Tuesday. We spoke about her book Greens 24/7 where she puts green vegetables in just about everything, beautifully and deliciously. Her corn muffins with kale caught my eye and I had to make them. I took our favorite cornbread recipe, added some chopped kale and the results were superb.
Daily Green Juice: Kale, Collards, Celery, Cabbage, Lemon
Dinner: After days and days of putting together the REAL Good News in Review, I had time to get back to other tasks that were on my list, like taxes. This was going to be a 2 day ordeal with no time for much of anything else. So we ordered in! We got avocado and sweet potato maki, a tofu dish with brown rice and inari sushi.
Evening: I brewed up a pot of Mocha Teeccino and when I went to serve it, Gary had turned it into something spectacular, mixing in cinnamon and coconut milk. A good night treat.
