What Vegans Eat – Day 440

Breakfast: We have a huge jug of blended watermelon. It’s fun to have this ready made to pour into glasses and enjoy. I was pretty hungry and I didn’t have the time or desire to be in the kitchen after spending two full days there. I grabbed about five quinoa balls from Friday’s Passover’s Matzoh Ball Soup and that was breakfast!
Lunch: There were so many different containers of things we had used in the last few days for the photo shoot. I took the remaining Moo Shu vegetables and heated them in a pot. I added leftover sautéed mushrooms, caramelized onions and some of the soup broth from Passover’s Matzoh Ball Soup and served it up with green tea.
Tea Time: Instead of afternoon tea, we had cocktails! Honeydew and Watermelon with colorful Melon and Ginger Juice ice cubes.
Daily Green Juice: Kale, Collards, Celery, Carrots and… Ginger Juice ice cubes.
Dinner: We both agreed that finishing up the remaining veggies burgers was the best idea. Having them two days in a row we are still convinced that these are the BEST VEGGIE BURGERS ever! With Field Roast Chao cheese, Chipotle Sauce, Lettuce and Tomato it is burger heaven. We made bars from our Power Popcorn recipe and had a couple for dessert.
