What Vegans Eat – Day 440

Breakfast: We have a huge jug of blended watermelon. It’s fun to have this ready made to pour into glasses and enjoy. I was pretty hungry and I didn’t have the time or desire to be in the kitchen after spending two full days there. I grabbed about five quinoa balls from Friday’s Passover’s Matzoh Ball Soup and that was breakfast!

Lunch: There were so many different containers of things we had used in the last few days for the photo shoot. I took the remaining Moo Shu vegetables and heated them in a pot. I added leftover sautéed mushrooms, caramelized onions and some of the soup broth from Passover’s Matzoh Ball Soup and served it up with green tea.

Tea Time: Instead of afternoon tea, we had cocktails! Honeydew and Watermelon with colorful Melon and Ginger Juice ice cubes.

Daily Green Juice: Kale, Collards, Celery, Carrots and… Ginger Juice ice cubes.
 
Dinner: We both agreed that finishing up the remaining veggies burgers was the best idea. Having them two days in a row we are still convinced that these are the BEST VEGGIE BURGERS ever! We made bars from our Power Popcorn recipe and had a couple for dessert.
