What Vegans Eat – Day 441

Breakfast: There were a half dozen small pears that were very ripe. Gary and I looked at each other for ideas about what to do with them. Great minds think alike! Pancakes with a pear compote, of course. Looking at the flour inventory in the refrigerator I decided to go with Buckwheat Crêpes. Pear compote, or any fruit compote is very easy. Just chopped the fruit in small pieces and place them in a saucepan over medium-low to medium heat and cover. Stir occasionally and make sure the fruit isn’t sticking or burning. If that’s the case add about 2 Tablespoons of water. Usually the fruit can steam in its own juices and the compote won’t get too watery. If there appears to be too much water once the fruit is cooked, remove the cover and let the liquid reduce down a little. I made a nice stack buckwheat cakes and there was leftover batter for another day.

Daily Green Juice: Kale, Collards, Celery, Carrots and Ginger Juice Cubes.

Snack: We’ve got plenty of Power Pop and Power Pop bars now, since we made them for the Food Revolution Summit. I grabbed a couple of bars for a great snack. They are made with popcorn, goji berries, raw nuts and seeds, cocoa powder and peanut butter.
