What Vegans Eat – Day 455


Breakfast: More waffles! Gary was at it again making a big batch of Light and Crispy Waffles. And I helped! I made Peanut Butter cream. Have you made any yet? It sounds good, right? Just mix a little water with some peanut putter until it’s thick like cream. You get that great peanut butter flavor, it’s easy to spread around, it doesn’t stick to the roof of your mouth and a little goes a long way.

Lunch: The remainder of Jerusalem Artichoke Soup plus more potatoes became a new soup with added turmeric, black pepper and some rehydrated mushrooms.

Daily Green Juice: Kale, Collards, Celery, Cucumber

Dinner: It’s burger time. There was one slice of Chao cheese in the refrigerator that needed a burger to be melted on. We had Healthy World Burgers in the freezer, along with some Ezekiel buns. We served them up with Kale leaves, Avocado Slices, Organic Valley Mustard, Organic Ketchup and Baked Fries.
