What Vegans Eat – Day 456

Breakfast: On the road again… I was getting ready for a little trip. First thing was to fuel up before taking a bus to a plane where I knew good food would be scarce. Gary made lots of waffles the day before. There was Peanut Butter Cream leftover too. I sweetened mine up with a little Prune Butter. We had Sliced Oranges too and Green Tea.

Daily Green Juice: Kale, Collards, Celery, Cucumber
 
Lunch: Gary made sure I had plenty of chow for the flight. Our Healthy World Burgers travel really well and are very tasty all on their own. Plus I had more Orange Slices and some of Gary’s special Gorp made with Pumpkin Seeds, Brazil Nuts, Apricots and Pascha Organic Chocolate Chips.

Dinner: When I arrived at my host’s home it was time for dinner. I was there to help and I offered to make dinner. There were lots of interesting leftovers in the refrigerator: a vegan lentil bolognese, sautéed Maitake Mushrooms, sautéed Broccoli, Brussels Sprouts in a vegan pesto sauce, and some plain, cooked Brown Rice Pasta. I cut up some tofu into cubes and put everything all together in one big pot and we had Goulash! It was delicious. Those Maitake mushrooms were meaty and chewy.

I took some raw Cashews and blended them with water, Nutritional Yeast and Apple Cider Vinegar for a quick salad dressing to toss with Mesclun Greens.

Evening: After a long day, I settled in with Yogi Roasted Dandelion Spice Tea.
 
Gary – how was your day and your meals? I know you gave me all the burgers to eat. There wasn’t much left in the house. I worry about you!
 
Hi Caryn!
No, don’t worry. Why worry? We live in “A bun dance!” I ate a big bowl of cold oats with lots of seeds and blueberries. The blueberries were frozen when I put them on top of the oats and it made for a really “cool” breakfast. To tell you the truth, I can’t remember what I had for dinner. Maybe more oatmeal. I was busy working on the Musical Theatre Workshop we’re teaching in San Jose next week and the world went away. They say that’s a sign of something and if I knew who said it and what it meant I’d probably remember other things too like what I had for lunch and dinner so I’m sticking with oatmeal and blueberries. And for me that’s a very exciting food day! Most likely Peanut Butter was on the menu, too. We especially live in Peanut Butter A Bun Dance! I miss you, my love. Travel safely. xoxo
