Breakfast: With plans to meet Gary’s sister-in-law Tammy for yoga in the main house, I got ready with a little tea and a fresh orange.
After yoga, Gary and I had Rolled Oats with Blueberries, Walnuts and Soy Milk.
Lunch: We drove over the hill to Santa Cruz with Tammy to see the renovation on their beach house. Gary’s brother Mark joined us there and we walked over to El Palomar for lunch. Gary and I were finally going to get our burritos! They actually had an entire section of vegan options. Funny, though, when our beautiful burritos came, we discovered they had cheese inside and back they went.
The second round was perfect. And we ate them all up.
Just before leaving we picked some fresh grapefruit to bring back with us.
Daily Green Juice: Later we went to Santa Row in San Jose and we got green juices from the Pressed Juicery.
Dinner: I thought I would never need to eat again after those big burritos. But when we got back to our guest house, a salad seemed necessary. I made one with mixed greens, leftover Brown and Red Rices from Khahn’s and Avocado.
I work at the Lakeview Methodist Camp in the cafeteria. I was hoping i could get some good quick recipes.
