What Vegans Eat – Day 466: Special Travel Edition

Breakfast: Freshly picked Grapefruit from Santa Cruz brightened up our morning Rolled Oats with Walnuts, Bananas and Blueberries.

Tea Break: Gary and I collected our thoughts and relaxed at Starbucks just before starting our Musical Theatre workshop. I had a cup of Jade Citrus Tea. It was light and lovely. I have begun a new project which you may see more of here, using original drawings instead of photographs. Let me know what you think!

Daily Green Juice: With the first day of our two-day workshop now complete, we were happy and hungry. The organizers of the workshop, Barbara Galiotto and Katie D’Arcey had invited us to dinner up at Barbara and her husband Steve’s beautiful home in the Santa Cruz mountains. They had created a beautiful vegan menu in our honor. We had some time so we went over to Whole Foods for our green juices before heading to dinner.
 
Dinner: We arrived at Steve and Barbara’s home and were greeted by her family and a few old friends. Barbara served White Wine and Lime Juice Cocktails while Katie and Steve cooked. We nibbled on Blue Corn Chips with Bitchin’ Chipotle Sauce made with Almonds.

Dinner was amazing! There was a basket of beautiful breads for the table.

The Cauliflower Coconut Milk Soup was creamy, rich and luscious.

The salad was a unique mix of Edamame, Celery, Pears and Pistachios.

There were two kinds of fresh pasta tossed with a rich Avocado Pesto.

Always leave room for dessert? There was little room left but we managed with “slivers” of Chocolate and White Cakes, Fresh Berries and three flavors of Coconut Bliss Ice Cream.

With satisfied bellies, we were given a basket of fresh, fragrant fruits and artichokes to take with us.
 
Evening: After a wonderful day, I enjoyed a plum and peach and a cup of Chamomile Tea.
