What Vegans Eat – Day 483: Special Travel Edition


Breakfast: When I got up I realized the WiFi wasn’t working. After a few minutes, I discovered the electricity was out and the outage was all over the neighborhood! It’s almost scary how dependent we are on electricity. Gary and I were grateful for the battery backup that operated the gate so we could get out and head over to Starbucks for tea and free Wifi. I was able to get necessary work done for the morning. When the electricity came back on we brought our teas with us and had our Rolled Oats with Strawberries back at the pool house.
Lunch: Preparing for my radio show interview with Jonathan Balcombe, author of What A Fish Knows, Gary made me a GIANT salad with Baby Kale, Tofu, Tomatoes, Pears, Apple Cider Vinegar and Flax Seeds.
Daily Green Juice: We grabbed a green juice at Whole Foods, the Vasona with Spinach, Kale, Carrots and some other goodies.
Dinner: Gary was out for the evening and I was back at work. I munched on plain Chickpeas. It’s an amazingly simple and satisfying snack or meal. Try it sometime! For dessert I had some Cherries and Grapes.
