What Vegans Eat – Day 492: Special Travel Edition


Breakfast: The scent of ripe nectarines can be intoxicating! Fruits should be eaten when in season and ripe. And now is the season for nectarines. And for those that are just learning about vegan foods, nectarines are vegan. All fresh fruit is vegan. Hallelujah!
Lunch: I am a happy girl right now staying near a beautiful swimming pool. I usually count my laps or lengths but today, sometime after a half mile or so, I gave up and just swam until I didn’t want to swim anymore. Then I enjoyed a really GREEN salad with Mixed Baby Greens, Arugula, Steamed Kale and Tahini Dressing.
Dinner: Gary and I completed another Musical Theatre Workshop and we were hungry. We were happy to find Whole Foods open until 10pm. At 9:45pm or so we ran in and grabbed burrito making supplies. When we got back to the pool house Gary made our late-night burritos with Ezekiel Sprouted Grain Tortillas, fresh Guacamole with Cilantro, Black Beans, Organicville Salsa and Sky Valley Sriracha and we washed them down with Sam Smith Organic Pale Ale.
