What Vegans Eat – Day 496: Special Travel Edition

Breakfast: After a big day of Sunday eating, and with so many freshly picked grapefruit, sliced Grapefruit is an easy and obvious choice for breakfast.
 
Dinner: We had a late lunch or early dinner, however you want to describe it. We eat when hungry and this was a satisfying meal. Gary cooked up some Garbanzo Beans with Organicville Salsa, Chopped Zucchini, Red Onions and Arugula. He made an Avocado Grapefruit Salsa. It all went into some Ezekiel Sprouted Grain Tortillas, topped with nutritional yeast.

Dessert: The Vitamix arrived! Gary’s nephew Zach has been getting into bodybuilding and healthy eating and we recommended getting a Vitamix for his green smoothies. We gave it a test run, making a Strawberry Champagne Sorbet with frozen strawberries, water and a splash of champagne.
 
Evening: We didn’t eat a lot during the day and in the evening we were a little hungry. This is our current late night treat in the pool house – Corn Thins. I spread them with Tahini and a special bonus: homemade apricot jam, a gift to Gary from Carol at Roy’s Station. Normally, when we eat fruit jams or butters, we make them ourselves from dried fruit and no added sugar, like our Apricot Butter. This Apricot Jam was VERY sweet, but I don’t think it was because of the added sugar, I think it was from thoughtfulness of the person who made it and gifted it.
