Breakfast: We still have plenty of fresh picked grapefruits. We began the day with some along with Irish Breakfast tea.
Lunch: The leftovers from the week had been merged into new dishes and now would be merged for the Grande Finale. I warmed up the stir fry from What Vegans Eat Day 500, which had already been merged with the Cabbage Salad from What Vegans Eat Day 498, along with the Tomato Salads from the week. It made an awesome burrito filling that will never ever be duplicated! That’s the leftover adventure. There was leftover Chamomile Tea from the night before that I chilled. It made a wonderful ice tea with some added fresh Lemon Juice.
Afterwards I ad more Chamomile Lemon Iced Tea and Fresh Plums.
Dinner: It was time for the big celebration. It was Gary’s dad’s 91st birthday. We made a lot of nice dishes to enjoy outside on the patio terrace. Gary and I began with Arugula Salad with Avocado and Cherry Tomatoes, tossed with Balsamic Vinegar.
Next up we had Roasted Mini Bell Peppers, Small Potatoes with Onions and a mix of Cauliflower and Broccoli.
The Vanilla Bean Birthday Cake we picked up from Whole Foods was divine and it was VEGAN! We started with slivers and had many more slivers after that. Gary’s dad did not want the rest the cake tempting him at home so we have it in our refrigerator calling to us. In other words, you will see it again in this blog.
