What Vegans Eat – Day 508: Special Travel Edition

Breakfast: Breakfast can be a beautiful work of art. Especially when you are hungry. Gary got up early to feed his brother’s dogs in Monte Sereno and then came back to San Jose to feed me with Steel Cut Oats, Bananas, Raisins and Sunflower Seeds and a pot of Irish Breakfast Tea.

Lunch: Today was the day to take Gary’s 91-year-old dad, Art, out and about. Art treated us to lunch at Khanh’s. We’ve been to Khanh’s A LOT since we’ve been here in San Jose. It’s always a treat. I will never tire of the Spring Rolls, cool and fresh with Crunchy Lettuce and Chewy Baked Tofu.

I went for the Vegetables Combination this time to get my Shiitake Mushroom fix. The Baby Corn and Bok Choy were especially tasty.

Daily Green Juice: After shopping with Art for food and socks we took him home and went off to do our own shopping. We stopped at Wholefoods where I picked up a Vasona Green Juice with no carrots and then we grabbed a few more items at Trader Joe’s.
 
Dinner: Gary and I took a nice forty-minute jog around the Rose Garden. Back at the house, sweating and recovering we ate sweet, juicy, ripe Nectarines. This is what summer is all about.
 
Evening: I had read this lovely article in the New York Times about Barack Obama earlier in the day. I was telling Gary how the article talked about how President Obama worked late at night, alone and nibbled on 7 toasted and salted almonds. It was always seven, and only seven. Gary treated me to seven Almonds and some Vegan Chocolate Chips.
