What Vegans Eat – Day 509: Special Travel Edition

Breakfast: I was treated to Gary’s Eggs, a special dish Gary invented that was published in Farm Sanctuary’s Living the Farm Sanctuary Life cookbook. This time he made it with Spinach instead of Kale and served it up with warm Organic Sprouted Corn Tortillas and Guacamole. We also had slices of fresh organic Cantaloupe on the side and big cups of Earl Grey Tea

Lunch: After some serious exercise (Gary ran, I swam) the hunger kicked in. When I swim a mile I need to eat quickly afterwards. It was time to visit the Vegetarian House. I thought I would try something new. I got the Golden Thai Vegetables with Pumpkin, Broccoli, Mushroom, Eggplant, Green Bean, Carrot, Cauliflower, Red Bell Pepper in a spicy Thai Lemongrass Sauce in Coconut Milk.

We indulged with Spicy Cha Cha. It’s a holiday weekend!

Dinner: Dinner was light. I made smoothies consisting of 2 cups of Almond Milk, one package of frozen Strawberries, 2 Tablespoons Cocoa Powder, 2 frozen Bananas, 1 teaspoon of Vanilla Extract and 3 Tablespoons of soaked Chia Seeds.

Evening: We celebrated our freedom on the eve of Independence Day watching the movie Suffragette. Gary had some Air Pop. I drank a lot of water. I was on the edge of my seat during the entire 140 minutes. I knew there was a happy ending, Women got the vote, but it took a lot of pain and suffering to get there. We couldn’t help but think of people everywhere, still suffering from poverty, hunger and abuse. And the exploitation in the film just reminded us of the struggles of the voiceless – the nonhuman animals in factory farms bred specifically for doom.
