What Vegans Eat – Day 54

Breakfast: After a big day of making lots of great food, we started the morning with a simple breakfast of matzoh, fresh pears and apples and our favorite schmears.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon
 
Late afternoon we were off to attend a family Passover Seder. I didn’t photograph any of the food! It was a busy afternoon and evening, singing, laughing and telling the story of Moses leading the Jews out of slavery in Egypt. I had little tastes of many things including several different varieties of charoset; red, yellow and orange bell pepper; red fruit salad; tofu; Grandma’s Vegan Chopped Liver; mixed nuts; and matzoh.
 
Dinner: Coming home from the family seder we brought out the leftovers. I had been looking forward to this all day. The Gefilte Fish tasted even better after being stored in a jar with homemade vegan aspic.
