What Vegans Eat – Day 541: Special Travel Edition

Breakfast: Some mornings I don’t want to start with starch. It was a smoothie kind of day. I made a big blender full with lots of Lacinato Kale plus Cocoa Powder, a little Peanut Butter, Almond Milk, a Mango, some Berries.

Lunch: This is a dish that I love, clean and simple: Red Lentils, topped with Nutritional Yeast and Raw Sesame Seeds.

Daily Green Juice: Kale, Celery, Cucumbers and lots of Lemon.
 
Dinner: I may not have been in the mood for a starchy breakfast but I was ready for some for dinner. Gary brought back garden Tomatoes from cousin Nancy’s house. I had made some Avocado Maki earlier in the day. We served them with Baked Sweet Potatoes.
