What Vegans Eat – Day 542: Special Travel Edition


Breakfast: Back to Cooked Rolled Oats with Apple, Raisins, Sunflower Seeds, Chia Seeds and Almond Milk and Strawberries on the side. Note the Red Bananas in the picture. We bought them a few days before at the Staff of Life Market. The sign said they would be ripe when soft to the touch. They are still hard. Will they ever ripen? Stay tuned!
Daily Green Juice: Kale, Cucumber, Celery, Lots of Lemon.
Dinner: Work is a bit more intense these days with a reading of Gary’s play coming up. We are preparing for it along with all the other things we do. I worked late and then I was crazy with hunger. Gary prepared a beautiful meal of Cauliflower with Fennel, Red Peppers and Herbes de Provence, along with a Red Lentil cheesy sauce, Corn Tortillas and a Kale Salad with Jicama and Little Seed Caesar Dressing. I couldn’t wait to eat, and eat a lot. I enjoyed a few bites and couldn’t believe how full I felt! I wanted to eat more food, it was so good but I didn’t have the room for it. I would have to wait for tomorrow’s leftovers to enjoy this meal again.
