What Vegans Eat – Day 543: Special Travel Edition

Brunch: Any meal tastes delicious when eating in a space this beautiful! We had brunch by the pool with leftovers from last night’s dinner that I could not eat enough of because I got full so quickly: Cauliflower/Fennel/Bell Pepper Stir Fry with French Herbs served with Red Lentil “Cheese” Sauce and Corn Tortillas.

Plus with all the garden Tomatoes we had, Gary sliced them up and mixed them with yesterday’s Kale Salad.

Daily Green Juice: Kale, Celery, Cucumber, Lots of Lemon.
 
Dinner: We were invited to our friends John & Deo for an early dinner before going to Cabrillo Stage to see their summer production of Fiddler On the Roof. Deo promised a simple meal and it was delicious. We began with a big salad of Greens, Cubes of Baked Tofu, Corn and Cherry Tomatoes tossed with Balsamic Vinegar. With four salad lovers it disappeared fast.

The next course was a delicious soup made from their garden Squash, blended with Cashews and delicately flavored with herbs and black pepper. We munched on Corn Thins, Cashew Cheese Spread and Peanut Butter until it was time to leave for the show.

Evening: Deo was super sweet! She packed individual bags of Dried Fruit and nuts for us to enjoy during the intermission!
