What Vegans Eat – Day 548: Special Travel Edition


Breakfast: Today was about catching up for me. We began with Irish Breakfast Tea with Soy Milk and Gary went out to visit with his dad and sister.
Lunch: Sometimes I get into “machine mode” working as efficiently and quickly as possible to get the tasks done. Getting hungry I made a simple plate of yellow and purple Carrots with the Red Lentil Cashew spread Gary had made a few days ago. It’s so good.
Daily Green Juice: Kale, Celery, Cucumber and lots of Lemon
Dinner: Gary had lunch at Khanh’s and brought me back Spring Rolls. Yum!
Evening: We went to downtown Los Gatos and after walking around a bit we decided to see the new Jason Bourne movie. I was so excited to see that they sold Alternative Baking Company cookies. We got the Explosive Expresso Chip Cookie to share. It was so good and…EXPLOSIVE, which of course paired well with the film. When back at the pool house we had some mint tea, made with fresh mint.
