What Vegans Eat – Day 559


Breakfast: When you take the time to make a lot of Buckwheat Pancakes then you can celebrate later with leftovers. This breakfast was fast with Buckwheat Pancakes I made yesterday. This morning we had them topped with Strawberries and Grapefruit on the side and Earl Grey Tea.
Lunch: We were meeting my sister’s family at Nanking in the theatre district. They had come in from Florida and Michigan to surprise my mom the next day for her birthday. Today they had plans to see School of Rock and meet Gary and me for an early dinner before the show. We are still on California time so the early dinner was our lunch. I had not eaten at this restaurant before. I decided to stay safe and order a simple salad. I got the warm Tofu Salad and skipped the dressing. Gary got the Pad Thai with Tofu.
Dinner: We had a big night planned ahead of us of working and catching up! We picked up some Spicy Mang and Chili Mushroom Soup at Beyond Sushi to fuel us for the night. The Spicy Mang Sushi Roll has black rice, avocado, mango, and English cucumber topped with spicy veggies and a toasted cayenne sauce. I am inspired to make something like this very soon at home. Stay tuned.
I went beyond sushi and ordered the Chili Mushroom Soup with braised shiitake, portabella, enoki mushrooms, baby spinach, roasted garlic, and hijiki. It was thick and rich and very filling. I ate some right away and the rest later on at night.
Evening: A perfect Pineapple for our late night dessert.
