Breakfast:There was plenty of leftover Easy Spinach Frittata and Corn and Sweet Potato Hash. It’s even easier when it’s leftovers. Served with cold brewed Green Tea.
Lunch: Simple and Big: Romaine Lettuce Salad with Avocado and Tahini Dressing.
Dinner: We were taking our next door neighbors Marcia and Dan out to celebrate. Marcia had to look after our mail and apartment when we were gone for 3 months and today is her birthday. We strolled over to Jade Eatery and Lounge. You may remember we had the Swingin’ Gourmets in the Happy B’Earthday Revue Fundraiser there last year. We were ready to party. We shared a bottle of Cabarnet and had some appetizers: Edamame, Avocado Maki and Shishito Peppers. The peppers are one of my favorite dishes to get there.
Gary got the Crispy Tofu. It’s good, but I think they should serve it with vegetables!
I got the Wok-Charred Vegetables and made sure Gary got a few bites.
The waitor brought Marcia a dessert he thought we could all share, thinking it was vegan because it was made with coconut milk. But then he went through all the ingredients and it had gelatin in it. Oops. That’s a no no. We said thank you and declined getting a taste. It was pretty, though, with the sparkler on top. Or was it pretty Marcia that made it pretty, though? I think it was the latter. Happy Birthday, Marcia!
Evening: Once at home Gary and I knew what we had to have – Coconut Meringue Pie. It was perfect.
Teeccino served with Steamed Soy Milk and dusted with Cinnamon was the ideal finale.
