What Vegans Eat – Day 572


Brunch: It’s a holiday weekend and that’s a good time for our Easy Spinach Frittata. Gary made his signature dish along with a Sweet Potato Corn Hash.
When there is Coconut Meringue Pie in the refrigerator it calls to you. We had some for an afternoon snack.
Daily Green Juice: Kale, Collards, Celery, Carrots
Dinner: Neither of us was hungry for dinner but I had soaked and cooked Yellow Split Peas and then added Carrots, Red Onion, Celery, Herbs and Spices (onion powder, garlic powder, turmeric, garam masala, marjoram, summer sage, ground anise seed) and this awesome thick soup was siting all by itself on the stove. We each took a small bowl and finished it and went back for seconds.
Evening: Teeccino with steamed Soy Milk, dusted with Cinnamon is a new treat in our house.
