Breakfast: This morning we enjoyed a lovely basket of waffles, served with Blueberry Coulis and Cold-Brewed Green Tea.
Lunch: I had an unusual craving for bread and butter. I satisfied it with Corn Thins and Miyoko’s Kitchen Cultured Vegan Butter which went well with our Lentil Cabbage Soup.
Daily Green Juice: Kale, Collards, Celery, Lemon
Dinner: Mm – a favorite, yet so simple: Steamed Kale with Mashed Potatoes (boiled Russet potatoes, mashed with nothing added).
Evening: In the morning I have been preparing a couple of jars of Cold-Brewed tea. We had the Rooibos Chai Iced Tea before going to bed.
