What Vegans Eat – Day 60

Breakfast: We warmed up the blueberry muffins made the day before and served them with peanut butter and some Genmaicha Tea. There was a little kale salad leftover and I finished it.

Lunch: I was working at my desk and Gary surprised me with a delicious and energizing smoothie made with collards, strawberries, bananas, blueberries, water and soy milk.

Dinner: We began rehearsals for the upcoming Happy B’Earthday Revue. We had a “roll your own” night with Black Bean Stew, Brown Rice, rolled up in Corn Tortillas along with Sweet Potatoes.black-beans-rice-sweet=potato
 
Evening: Peppermint Tea
