What Vegans Eat – Day 603

Breakfast: I began by making a Pumpkin Bread modifying our Pumpkin Spice Muffin recipe. The batter looked like a batter should but it took forever to cook so this bread wasn’t going to make it for breakfast. It will show up later in the post.
 
Lunch:
It was around lunchtime when I finished with the bread and had to let it cool before serving. We had to eat something! I have to admit one of my favorite meals is making a big soup out of leftover Chinese food. Gary knows this which is why he gave me the Green Zenphony leftover Veggie Beef Chow Fun and Brown/Red Rice and he made himself some oatmeal. I mixed the Chow Fun and Rice with Water and broke in some Wakame pieces and heated it up. It kept my belly happy all day.

Daily Green Juice: Kale, Collards, Celery, Carrots, Lemon, Ginger
 
Dinner: I had cooked up some garbanzo beans earlier in the day in order to get some Aquafaba to make something fun with later and also have some Lemon Chickpea Soup. I almost cooked off all the Aquafaba (bean water) so I added some more water to the pot and let the beans cook a little longer. Gary made the soup for dinner.

And we were able to try the Pumpkin Bread. It has a great consistency, moist and chewy, but I want to work on it a little more before posting a recipe.
