Breakfast: With Gary off to acting class I grabbed a simple bowl of my homemade Ruby Kraut. I often enjoy savory foods for breakfast. This first batch of homemade sauerkraut is surprising me because I like it so much.
Lunch: I baked a squash knowing Gary would be hungry when he got back in the afternoon. I sliced it up and served it with a blend of the last Coconut Curry Bean Cake and a big Romaine lettuce Salad. We thought it wouldn’t be enough or satisfying. How wrong we were! We dug in to those squash slices and laughed as we likened it to a crab feast, licking our fingers. That squash was so tasty, just baked and served plain. And no, we couldn’t eat the whole thing.
Daily Green Juice: Kale Collards, Celery, Carrots, Lemon, Ginger
Dinner: I had also cooked some Yellow Split peas that I thought I would save for dinner. We were not very hungry but each took a small bowl of the Peas, garnished with Nutritional Yeast and Black Pepper. I love eating this way.
