What Vegans Eat – Day 622: Special Travel Edition

Breakfast: Big road trip to Jacksonville area today. We are staying in Lauderdale-By-The-Sea and my cousins live in Jacksonville and my aunt and uncle live in St. Augustine. We had a satisfying breakfast of Rolled Oats, Strawberries, Walnuts, Raisins and Soy Milk, plus Earl Grey tea and Genmaicha for me. Then we were on our way – a 4 1/2 hour car ride, straight up Interstate 95 South.

Lunch: Gary packed snacks for the road. First we had donuts. Well not really. They were Purple Sweet Potatoes from Josh’s Organic Market and they TASTED like donuts! Really! They are one of the most delicious things I have ever eaten!

We had Apples, Bananas, an Avocado, Mary’s Gone Crackers, Dates and Almonds to snack on along the way.

We arrived on time in St. Augustine at my Uncle Stanley and Aunt Marietta’s home. We’d learn later that the Republican candidate for president was in town and we were lucky not to get stuck in any traffic related to that event. My aunt touched my heart – she went out of her way to make sure there were drinks and treats for Gary and me. We had Evian and Perrier along with Kale & Spinach Chips, Sliced Cucumbers and mini Pitas. But the most touch of all was that she made my mom’s Vegan Chopped Liver. It’s been a tradition at family events for years, made by my mom in New York. Marietta uses a walker now so this was no easy feat. And it was delicious. Just like mama makes!

Dinner:
My cousins arrived later – Donna with her daughters Kathryn and Megan and Jeffrey with his son Victor. We went to a local Japanese place called Sumo Sushi to avoid the campaigning downtown. Gary and I ordered Edamame, Avocado Maki, Vegetable Roll and Sweet Potato Maki. The Sweet Potato Maki came with cream cheese. Who puts cream cheese in maki??? We never thought to even ask. It went back and the server brought out Sweet Potato Rolls without the dairy. Other than that, it was all good.

Evening: We left at 8:30pm and headed back to Lauder-By-The-Sea. Gary drove and we made it in 4 hours since it was late and the roads were empty. We nibbled on our snacks along the way. Once ‘home’ at the resort we are staying at we had some Trader Joe’s Well Rested Herbal Tea.
