Breakfast: Have you tried this Corn Bread recipe yet? Gary made it using Coconut Milk this time instead of water. What a treat! It was rich, moist, sweet and delicious.
Lunch: After a walk back from grocery shopping, Gary made a wonderful stew. It’s a little like ratatouille, with eggplant, onions and tomatoes, but he used carrots and tempeh in place of the peppers and zucchini. We’re calling it Eggplant DeMatouille! He served it up with a big Romaine lettuce salad and Tahini Dressing.
