What Vegans Eat – Day 640


Breakfast: Our Fruity Waffle and Fruity Corn Waffle recipes make 8 thick waffles in our waffle maker. That means there are always more the day after we make them. These waffles, as I mentioned yesterday, are so tasty you don’t need to put anything on them. I pressed some raspberries into the waffle holes. That was fun. We had them with Grapefruit, Bai Mu Dan tea for me and Earl Grey for Gary.
Lunch: Lunch consisted of Marinated Tempeh with baked Fries, Kale/Tomato Salad and Sauerkraut. Gary made a zesty marinade, using some of the candied citrus peels he had prepared for his Panettone.
Daily Green Juice: Kale, Collards, Celery, Carrots
Dinner: Lunch had been big and satisfying so we just ate here and there later in the evening. I had some more Kale/Tomato Salad.
It’s fun to have little pots of Chocolate Mousse. I topped it with more raspberries.
Evening: We’ve got Panettone in the house. The holidays are coming! We each had a “sliver” with Teeccino.
