What Vegans Eat – Day 66

We are just a few days away now from Earth Day and the Happy B’Earthday Revue. So much to do! There will not be much food prep in the next few days and it will be interesting to see what we do eat.
 
Breakfast: Oatmeal is easy and we love it. We had it cooked and topped with frozen strawberries which I let defrost before using. It went with Jasmine tea. There was talk of a little sore throat going around, so in addition to our daily vitamin D and B12, we took some vitamin C and Zinc.

The fun begins as we rehearse and prepare our Swingin’ Gourmet’s program for the Happy B’Earthday Revue, and start putting together the packages for our silent auction:

Two $100 Gift Certificates from GoOrganicNYC. We’ve been customers of GoOrganicNYC for several months now and delighted with the produce. They have been keeping me juiced up – with kale, collards, celery and carrots.

I’ll be getting my hair done for the event at Sera Salon by my favorite hairstylist Evilina. Sera Salon is donating a manicure for our event.

One of the silent auction packages will include a free 1 year subscription ($120) value for Gaiam TV. I would love this with unlimited access to all of their yoga videos, films and documentaries.

Dinner: There was still more cooked beans and millet and I wanted to experiment again with making burgers and buns. I added some different spices to the burger mix – cumin, chili powder, paprika and adjusted the bun recipe. The bun recipe is improving, still a work in progress. I could have spiced the burger even more. It’s a good base to play with. A kale salad went with it, tossed with creamy Balsamic Dressing.
